I really do enjoy cooking. Just love reading recipes books am always on the look out for interesting recipe books. Pages and pages full of brightly coloured pictures of tempting dishes whether they be old favourites from my child hood or new and exciting ones yet to try!!!!
Learning spices and techniques does take time and I must admit often does not turn out but practice, practice and a little experimenting goes a long way in learning to perfect dishes and tastes..

Matar and Gjar Chapati ( Pea and Carrot Chapati)

MATAR AND GAJAR CHAPATI (PEA AND CARROT CHAPATI)
A simple chapati with hidden nutrition. Great for kids with the bright colours of orange and green poking through the normally slightly dull looking chapati!!!


WHAT YOU NEED:
2 carrots grated (fine or not it is up to you)
About 1/4 cup of green peas (quickly cooked till just done)
1/4 cup finely chopped onion
1/2 tsp cumin seeds
pinch of turmeric
1 tsp of garam masala
1/2 tsp of ginger paste
1/2 tsp garlic paste
1 tsp red chilli powder (optional)
salt to taste
1 1/5 cups of wheat flour
2 tbs oil
Enough warm water or warm milk to form a soft dough.

WHAT YOU DO:
1. Heat oil in a pan and add the cumin seeds.
2. When the cumin seeds start to sizzle add the onion and ginger/garlic pastes.
3. When the onion starts turning brown the add the grated carrots and saute for 5 mins or till the cooked.
4. Add the garam masala, turmeric and red chilli powder and salt. Saute for a further 5 mins. Stirring and squashing the peas.
5. Remove this mixture and set aside till cool.
6. In a large bowl mix wheat flour, carrot and pea mixture, oil followed by enough warm water or milk to make a smooth soft dough.
7. Knead till well combined and a nice dough is formed and set aside for an hour.
8. Divide the dough and make small balls. Roll these balls into large flat discs.
9. Heat a flat pan and place the chapati on the pan. Cook on one side and then drizzle a little oil on the uncooked side and flip and cook till done on the other side. Keep uncooked dough covered to prevent drying. Wrap cooked chapati in a warm clean tea towel till serving.
10. Yummy and healthy carrot and pea chapati are ready.
