CABBAGE SAMBHAR
A delicious and easy way to transform a simple green leafy cabbage to a warm, healthy and comforting dish.
Serve with rice.
WHAT YOU NEED:
2 cups of finely shredded cabbage
2 medium diced carrots
2 medium tomatos or roughly 10 cherry tomatos
1 medium onion
1/2 cup tour dal
4 dried red chilli
1/4 cup dessicated coconut
1/2 cup tamarind paste
2 tsp sugar
pinch of asafoetida
1/2 tsp cumin seeds
salt to taste
For tempering: 1 tsp mustard seeds and a sprig of curry leaves plus 2 tsp oil.
WHAT YOU DO:
1. Cook the tour dal till soft and mushy.
2. Grind the coconut and red chilli and cumin seeds together with a little water.
3. In a pressure cooker place cooked tour dal, shredded cabbage, diced tomato, diced onion and diced tomato. Followed by the coconut/chilli and cumin paste.
4. Add enough water to just cover all the cabbage etc
5. Pressure cook till cabbage is cooked. Aproximately 2 whistles.
6. In a seperate pan heat 2 tsp oil and temper the mustard seeds and curry leaves when the mustard seeds start to splutter and pop pour this mixture into the cabbage sambhar mix and mix in.
7.Cook for a few more mins then serve hot with rice.
