I really do enjoy cooking. Just love reading recipes books am always on the look out for interesting recipe books. Pages and pages full of brightly coloured pictures of tempting dishes whether they be old favourites from my child hood or new and exciting ones yet to try!!!!
Learning spices and techniques does take time and I must admit often does not turn out but practice, practice and a little experimenting goes a long way in learning to perfect dishes and tastes..

CORN RICE

CORN RICE
A delicious way to flavour rice both appealing to the eye and the tummy. Basmati rice speckled with golden corn. Delicious.

WHAT YOU NEED:
1 cup of corn kernals
1 cup of rice
A dozen cashews or peanuts - broken
pinch turmeric
generous pinch of garam masala (optional)
pinch of sambhar powder (optional)
1 tsp of chilli powder (adjust to desired spiciness)
salt to taste
1/2 tsp of cumin seeds
1/2 tsp of mustard seeds

WHAT TO DO:
1. Heat oil and add the mustard and cumin seeds and allow to splutter.
2. Add the cashews or peanuts followed by the corn and then by the chilli powder, turmeric, sambhar powder, garam masala and salt and fry off for a min or two (until raw smell reduces)
3. Add the uncooked rice and combine well till the mixture coats the uncooked rice.
4. Add one and half to two cups of water to the uncooked rice mixture and stir well then cook till rice is done.
Serve
