EASY VANILLA CUPCAKES
Quick and easy and very vanilla!!!! Yummy treat for everyone!!!
(these vanilla cupcakes are iced with pink buttercream and white hearts of royal icing)
WHAT YOU NEED:
200g butter, softened
1 3/4 cups caster sugar
2 tsp vanilla extract (add more if you love the sweet vanilla taste)
4 eggs
2 3/4 cups self-raising flour
1 cup milk
WHAT YOU DO:
1. Preheat an oven to aproximately 180 celcius or if you are lucky enough to have a cupcaker maker simply turn it on.
2. Beat softened butter and sugar together till light and fluffy.
3. Add vanilla essence.
4. Slowlly add the eggs into the mixture.
5. Now fold in the flour and milk till just combined.
6. Now fill cupcake cases or a greased muffin baking tray. Only fill 3/4 so that the cupcakes rise nicely and dont overspill.
7. Place the 3/4 filled cup cake papers in the cupcake maker or muffin tray and bake till a skewer comes out clean. In the cupcake maker this takes about 12 mins or in the oven it takes aprox 15 to 20 mins.
8. Remove from tray/maker and place on cooling rack.
9. If desired ice once completely cool.
