ULLI PACHADI (ONION PICKLE)
Quick, easy, spicy and delicious!!!!!!
WHAT YOU NEED:
2 large onions- sliced or diced
2-3 dried red chilli ( add more if you like it spicy)
1/2 tsp cumin seeds
1 tbsp urad dal
1/2 tbsp tamarind extract
1/2 tsp jaggery or sugar ( I used white sugar)
salt to taste
1 tsp mustard seeds
curry leaves (optional)
oil for frying
WHAT YOU DO:
1. Heat a few tsps of oil in a pan over medium heat and add cumin seeds, urad dal, dried red chillis and fry a little.
2. You can either add the onions straight in but if you are afraid of burning the dals and red chilli then removed them first and set aside while you fry the onions.
3. Once onions are cooked down add tamarind and sugar(or jaggery) and the dals/chilli that you set aside.
4. Once mixed cook for a 1 to 2 mins on low heat and remove and grind. Set aside. Adjust salt if necessary.
5. Heat some oil and add mustard seeds and curry leaves and allow mustard seeds to pop.
6. Pour this on top of the ground onion mix.
7. Serve with hot rice!!!
