I really do enjoy cooking. Just love reading recipes books am always on the look out for interesting recipe books. Pages and pages full of brightly coloured pictures of tempting dishes whether they be old favourites from my child hood or new and exciting ones yet to try!!!!
Learning spices and techniques does take time and I must admit often does not turn out but practice, practice and a little experimenting goes a long way in learning to perfect dishes and tastes..

Banana and Pineapple Cake

BANANA AND PINEAPPLE CAKE/BREAD
In the attempt to get my 2 year old to eat bananas and pineapple (both of which she refuses to eat) I thought I would try to tempt her with cake. After all who does not love cake!!!

WHAT YOU NEED:
2 ripe bananas, mashed
1/2 cup drained crushed pineapple
1 1/4 cups caster sugar
1 2/3 cups self-raising flour
2 tsp ground cinnamon
2/3 cup oil
1/4 pineapple juice
2 eggs

WHAT YOU DO:
1. Preheat your oven to 180 celcuis and grease and line loaf pan OR a round cake pan.
2. Mix the bananas and the crushed pinapple together along with the cinnamon, flour and sugar.
3. Combine the eggs, pineapple juice and whisk.
4. Add the oil and combine the two bowls.
5. Gentle mix till all combined and pour into the loaf or cake pan.till a skewer comes out of the centre of the cake/loaf clean.
This cake would taste extra special with a creamcheese icing. Just combine creamcheese and icing sugar till desired sweetness and add a dash or two of milk to thin the mixture to a smooth easily spreadable mixture and spread onto the cool cake.
6. Bake in the oven till a skewer comes out clean.
7. Cool in cake pan for 5 mins and transfer to cake rack.
8. If desired ice with creamcheese icing when completely cool or serve on its own.
