I really do enjoy cooking. Just love reading recipes books am always on the look out for interesting recipe books. Pages and pages full of brightly coloured pictures of tempting dishes whether they be old favourites from my child hood or new and exciting ones yet to try!!!!
Learning spices and techniques does take time and I must admit often does not turn out but practice, practice and a little experimenting goes a long way in learning to perfect dishes and tastes..

Dahi Bhindi

DAHI BHINDI
A healthy and quick dish to prepare best served with rice and chapatis.



WHAT YOU NEED:
250 gms tender okra (topped and tailed)
¼ tsp pepper corns
1 tbsp oil
1 dry red chilli
1 tsp cumin seeds
2 green chillis slit lengthwise
1 tsp of ginger/garlic paste
1 tsp coriander pwd
1/2 tsp turmeric
1 tbsp besan - roasted to aromatic
1 cup yoghurt
salt to taste

WHAT YOU DO:
1. Fry the okra in a little oil till almost cooked about 4 mins. Keep aside
2. Heat oil and add cumin seeds, peppercorns and dry red chilli for a few mins.
3. Followed by turmeric, ginger/garlic paste, green chilli, coriander powder and roasted besan flour. You need to stri constantly and avoid burning it.
4. Now add the okra and combine.
5. Reduce heat to low and add the salt and whisked yoghurt. Gentle heat and combine.
Serve with white rice or chapatis
