I really do enjoy cooking. Just love reading recipes books am always on the look out for interesting recipe books. Pages and pages full of brightly coloured pictures of tempting dishes whether they be old favourites from my child hood or new and exciting ones yet to try!!!!
Learning spices and techniques does take time and I must admit often does not turn out but practice, practice and a little experimenting goes a long way in learning to perfect dishes and tastes..

Tomato Rice - One Pot

TOMATO RICE
A quick and tasty dish. Great for lunch or an easy and satisfying dinner when time elludes you!


WHAT YOU NEED:
2 larged tomato finely diced
1 small onion finely diced
2 tsps of ginger/garlic paste
1 green chilli - sliced
1 black cardamon
1 tsp garam masala
1 tsp red chilli (more or less to taste)
2 tbs ghee or oil/butter mix
2 rice cups of basamti rice ( washed till water runs clear)
Salt to taste

WHAT TO DO:
1. Heat ghee and add cardamon pod followed green chill, onion and ginger garlic paste. Fry for a couple of mins.
2. Add tomatoes followed by salt, garam masala and red chilli.
3. Fry for 5 mins then add the uncooked rice and stir until the mixture has completely covered the rice.
4. Add 4 of the rice cups of water to the dish and cover. Now either place rice cooker pan in rice cooker and turn on or cover pan and cook till rice is done and all water absorbed.
5. Serve with raitha or just on its own.
