SPICY PEANUT CHUTNEY #1
A delicious and spicy side to serve with hot steamed idli or dosas. You can adjust the number of chilli to increase or decrease the level of spice. (Can be stored in the fridge in a sealed container for 2 or 3 days)
WHAT YOU NEED:
1 cup of peanuts
5 dry red chilli ( You can adjust the number of chillis to suit your tastebuds)
Salt to taste
1 piece of tamarind the size of one small lime soaked in hot water for 10 mins
WHAT TO DO:
1. Dry roast the peanuts and red chilli in a pan over medium heat until a delicious aroma is released. ( Be careful not to burn as this will ruin the taste of the chutney) Cool.
2. Grind the peanuts and chilli and add salt to taste.
3. Squeeze the tamarind and discard. Slowly add the tamarind water till you get the consistency and taste you prefer.
4. Chutney is done and ready to be served with steamy idlis or crispy dosas.
