CARROT RICE
A delicious dish bursting with vitamin C and colour. Carrots may seem bland to some but not to me and not to you when you try this yummy Carrot rice dish.
WHAT YOU NEED:
4 cups of rice
2 small to med sized onions or 1 large - diced
6 med carrots
2 tsp chana dal
2 tsp urid dal
3 cloves
1 tsp mustard seeds
small piece of cinnamon
sprig of curry leaves
salt to taste
4 tsp of ground nuts fried
Masala:
2 1/2 tsp of coriander seeds
1 1/4 tsp of cumin seeds
3 tsp grated coconut
5 dry red chillies
WHAT TO DO:
1. Dry roast the ingrediants from the masala till aroma escapes. Be careful not to burn.
2. Cool and grind. Set aside.
3. Wash and drain rice. Set aside
4. Heat oil and add mustard seeds, curry leaves, chana dal, cloves, urid dal, cinnamon, and let sizzle and pop.
5. Add the onion and fry till onion is translucent.
6. Add the grated carrots and fry for a couple of mins.
7. Add the masala and fry for a couple more mins.
8. Add the rice and mix till rice is completely coated.
9. Add 8 rice cups of water cover and either transfer to rice cooker and cook or cook on stove top till rice is cooked and water is absorbed.
Carrot rice is done and ready to be served.
