E IS FOR EASY! EASY POTATO CURRY

E IS FOR EASY! EASY POTATO CURRY!
Sometimes I just want to do something easy and super tasty. Dont want to stand over the stove or be grinding anything. Easy potato fry is just that. Simple and easy and super tasty! I love the crunchy little bits. Just delicious.
WHAT YOU NEED:
4 medium potatos (peeled, cooked till soft and cut into small bite sized pieces)
1 medium onion (diced)
1 tsp of mustard seeds
1 tsp cumin seeds
1/2 tsp of garam masala
1 tsp of sambhar powder ( you may need to adjust this to suit your tastes as all sambhar powders are different especially when using home made)
salt to taste
oil

WHAT YOU DO:
1. Heat  a tbs of oil and add the mustard seeds followed by the cumin seeds. When they start to sizzle and crack add the onion.
2. Fry till the onion translucent and add the garam masala and sambhar powder.
3. Now add the cooked and cut potato and stir to coat the potato in the oil and spices.
4. Cook over medium heat till outside is cunchy and yummy.
Serve hot with rice and yoghurt.
