LION RICE (LIME RICE)
Lunch time was looming and I was struggling to think of something new and fresh to give my daughter for lunch before we went to the supermarket. I had some leftover rice and a carrot that I need to use so I thought to do a quick lemon pulihora with hidden grated carrot for extra nutrition.
Half way through I realised I had no lemons only some lime juice. Still refreshing I thought to myself so I Substituted in the lime juice thus creating Lime Rice. However on informing my 3 yr old that she was having lime rice for lunch she misheard me and said "LION RICE!!!!!!!!!".....
WHAT YOU NEED:
3 cups medium grained rice, cooked (or leftovers work too)
1/4 to 1/2 cup of cashews and peanuts
1 carrot - finely grated
1 tsp mustard seed
1 tsp urad dal
3-5 dried red chillies (or as per taste)
1 tbsp channa dal, presoaked in warm water for 20-30 min.
Pinch of turmeric powder
Pinch of asafoetida
Curry leaves (if available)
2-3 tsp of sesame oil
WHAT TO DO:
1. Mix the cooled rice with 1 tsp of sesame oil and salt.
2. Add lime juice to taste. The more you add the more "zing" it will have.
3. In a small pan heat remaining sesame oil and add mustard seeds and allow to pop.
4. Follow this by add urad dal, chana dal, dry red chillies, turmeric, asafoetida and curry leaves and allow to sizzle and become aromatic. Be careful not to burn.
5. Remove from heat and mix into rice. Combine.
